Coconut Icing Recipe
250g Icing Sugar, sifted
80g Pipkin Coconut Butter
20g Unsalted Butter
35ml Whole Milk
1. In a large bowl, whisk together the icing sugar and both butters. 2. Gradually add the milk until the ingredients have combined. 3. The icing will be quite thick. You can add more milk to soften the frosting if needed. 3. Using a palette knife, evenly spread the icing over the top of your cakes.
This icing tastes particularly good with chocolate flavoured sponges.
